Spruce Homebrew- How much is too much and which malt extracts work best?
Every recipe I've ever seen for spruce homebrew has use dark malt extract syrups and powders and black patent and chocolate specialty malts. I'm not particularly partial to any of these, and I happen to have enough amber extract, syrup and dry, and crystal malt lying in storage to replace all dark ingredients in most of these recipes. Will the amber extract support the spruce flavor or will it be too thin?
I have exactly 4 oz. of new spruce tips that I harvested yesterday and put in a zip lock bag in my fridge. How long will they stay fresh? In one recipe, I noticed it called for Spruce Essence during the final 2-4 minutes of the boil. Does this add bouquet like finishing hops would or is this so that the flavor wont boil off as the wert is cooking? Could I use the spruce tips in the same fashion, i.e. 3 oz. to boil and 1 oz. to finish and end up with a sprucey bouquet?
Spruce tips require a 45 min. boil to extract the flavor. I am worried that your paler extracts may not be able to stand up to it. You won't know until you try, though.
The spruce acts just like hops, as a preservative and a flavoring. Incidently, if the spruce comes on too strong, don't toss out the beer; set it aside for a year or two and you could have someting special when it stops smelling like Pine-Sol.
